Summer Zucchini Pasta
(serves 4-5)
-1 lb penne
-4/5 small zucchini
-2 cups grape tomatoes halved
-1 cup crumbled feta
-4 tbsp. olive oil
-1/4 tsp. red pepper flakes
-4 garlic cloves coarsely diced
-1/3 cup finely chopped basil tightly packed
-Boil salted water for penne.
-Cut Zucchini into penne size shapes.
-Boil the penne. When three minutes from finished, toss the zucchini into the pot. When penne is finished, save approx 1 cup of the water. Drain the rest.
-Put the pot right back onto the stove. Film bottom with the olive oil. Add red pepper flakes and garlic. Gently sautee about 30 seconds to a minute, until garlic is fragrant.
-Remove pot from heat. Add the zucchini and pasta. Throw in the feta, tomatoes, and basil. Pour in some of the water you saved so the pasta is lightly covered. Toss and serve.
